Why I Chose Veganism

I didn't make the decision to go vegan over nite. After I was diagnosed with a breast cancer recurrence (estrogen and progesterone positive), I made the decision to become a vegetarian.  I eliminated animal meat and kept fish and dairy (cheese and eggs) in my diet.  I spent countless weeks researching the health benefits of a vegetarian lifestyle.  During my research, I learned dairy contains casein, which is linked to breast cancer. 
 
This led to doing a deep dive research into veganism; a plant-based diet that consists of fruits, vegetables, legumes, tofu, grains, nuts and seeds.  Studies have shown that a vegan diet lowers blood pressure, cholesterol, heart disease, cardiovascular disease, BMI, arthritis, prevents type 2 diabetes and some cancers, like breast and prostate. 
 
After discovering the health benefits of veganism, I made a life changing decision, to live as a vegan.  You are probably picturing a skinny, long-haired, hippie living off the land in the wilderness.  That vegan probably exists today; however, we are in modern times and more and more people who have survived cancer or any other disease for that matter are moving to a vegan lifestyle.  In fact, veganism is now one of the leading diets around the world. 
 
The only challenge I faced when transitioning to  veganism was giving up cheese.  Cheese was a big part of my diet, I love it, however there was a compelling enough reason to give it up. They say animal protein, including dairy products, causes inflammation in the body.  After I gave up everything that runs or swims, my stomach became flatter and I lost a quick 7 pounds. 
 
My moto is EAT to LIVE!   That means, eating a whole foods plant-based diet.  The first step to healing my body, is to eat more whole foods and less processed junk.  Healthy eating provides the necessary nutrients my body will need to create new cells, clean out the toxins from radiation and prevent a recurrence.  

Veganism is a personal choice and is not for everyone.
