Chocolate Oatmeal Bombs

WHAT'S IN IT?
  • 3/4 cup dark brown sugar
  • 2 tablespoons organic salted butter (softened)
  • 2 tablespoons plain unsweetened almond milk
  • 1/2 cup coconut flour
  • 1/2 cup brown rice flour
  • 1 egg
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 cup unsweetened applesauce
  • 1/2 cup Ghirardelli  60% cacao bittersweet chocolate chips 
  • 1 1/4 cup oats

HOW TO MAKE IT:
  • Preheat oven to 350.
  • In a bowl with a hand mixer, mix sugar and softened butter for 2 minutes.
  • Add the egg and mix for 1 minute.
  • Add the applesauce and almond milk and mix for 1 minute.
  • In a separate bowl, add flour, cinnamon and baking soda and mix until blended and add to the sugar mix.
  • Stir in the chips and oats.
  • Drop a little less than a handful in your palm and roll into a ball.   Set on baking sheet about 1-2 inches apart.
  • Bake for 15 minutes 
  • The outside of the oatmeal bomb will be crisp and the inside will be soft.  You can cook them a little longer if desired.  Careful not to over bake, or they will be so firm you won't be able to sink your teeth into them.​​
