1/2 cup Ghirardelli 60% cacao bittersweet chocolate chips
1 1/4 cup oats
HOW TO MAKE IT:
Preheat oven to 350.
In a bowl with a hand mixer, mix sugar and softened butter for 2 minutes.
Add the egg and mix for 1 minute.
Add the applesauce and almond milk and mix for 1 minute.
In a separate bowl, add flour, cinnamon and baking soda and mix until blended and add to the sugar mix.
Stir in the chips and oats.
Drop a little less than a handful in your palm and roll into a ball. Set on baking sheet about 1-2 inches apart.
Bake for 15 minutes
The outside of the oatmeal bomb will be crisp and the inside will be soft. You can cook them a little longer if desired. Careful not to over bake, or they will be so firm you won't be able to sink your teeth into them.
